There are few things better after a long day than chocolate. Wine is good, especially a good wine you found on sale or, even better, on clearance, at a liquor store in a state that doesn’t charge tax. Cheese is pretty good, too, as long as you have high quality apples or hifalutin gluten-free crackers to pair with whatever chevre you happen to have in stock for such occasions. But then there are days that call for chocolate. Those are the days that require a bar of fair trade dark chocolate, removed from the freezer immediately after you arrive home after a long day or, better yet, a veritable bacchanal of chocolate cake. Sometimes chocolate cake–homemade from a recipe you can trust to turn out and turn out well–is the only antidote to work.
